Vegan Crepes Dream

 


Ingredients for the crepes:

- 60g rice flour

- 30g tapioca flour

- 240ml coconut milk (or another plant-based milk of your choice)

- 15ml coconut oil (or another vegetable oil)

- 15ml maple syrup

- 5ml vanilla extract

- A pinch of salt


Ingredients for the filling:

- Fresh strawberries

- Ripe bananas

- Kiwi

- Dark chocolate flakes

- Organic maple syrup

- Vegan coconut or vanilla ice cream

- Chopped nuts


Instructions:

1. In a bowl, mix together the rice flour, tapioca flour, coconut milk, coconut oil, maple syrup, vanilla extract, and salt until smooth.

2. Heat a non-stick pan over medium heat and lightly grease with coconut oil.

3. Pour a ladleful of batter into the hot pan and tilt it to spread the batter evenly across the surface.

4. Cook the crepe for about 1-2 minutes on each side, until golden brown.

5. Repeat the process with the remaining batter until finished.

6. Fill each crepe with slices of strawberries, bananas, and kiwi, sprinkle with dark chocolate flakes, and drizzle with maple syrup.

7. Fold or roll the crepes and serve them hot, accompanied by a scoop of vegan coconut or vanilla ice cream and a sprinkle of chopped nuts.
