Vegan mayonnaise
Ingredients:
- 1/2 cup unsweetened soy milk
- 1 cup sunflower oil (or another vegetable oil of your choice)
- Juice of half a lemon
- 1 teaspoon mustard
- A pinch of salt
Instructions:
1. Start by pouring the soy milk and lemon juice into a high-speed blender.
2. Add the mustard and a pinch of salt.
3. Begin blending at low speed and slowly pour in the sunflower oil in a thin stream.
4. Continue blending until the mayonnaise becomes thick and creamy. You may need to stop and scrape down the sides of the blender with a spatula to ensure all the ingredients are well incorporated.
5. Taste and adjust the salt or lemon juice to your liking.
6. Transfer the vegan mayonnaise to a jar and store it in the refrigerator for up to a week.
