Guacamole
Ingredients:
- 2 ripe avocados
- 1 lime (juice)
- 1/4 cup finely chopped red onion
- 1 medium ripe tomato, seeded and chopped
- 1 clove garlic, finely minced
- 1 fresh green chili pepper, finely chopped (optional)
- 2 tablespoons fresh cilantro, chopped (or parsley if you don't like cilantro)
- Salt, to taste
- Black pepper, to taste
Instructions:
1. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
2. Mash the avocado flesh with a fork until creamy but still slightly chunky.
3. Add the lime juice and mix well to prevent the avocado from browning.
4. Stir in the red onion, tomato, garlic, chili pepper (if using), and cilantro.
5. Season with salt and black pepper to taste.
6. Gently mix all the ingredients until well combined.
7. Taste and adjust salt and pepper if necessary.
8. Transfer the guacamole to a serving bowl and cover with plastic wrap pressed directly onto the surface to prevent browning.
9. Let it rest in the refrigerator for at least 30 minutes before serving.
10. Serve the guacamole with corn chips, tortillas, raw vegetables, or as a side for Mexican dishes.
