Baked Stuffed Potatoes


Ingredients:

- 4 medium potatoes

- 100g diced bacon

- 2 tablespoons butter

- 1/4 cup milk

- 1/4 cup grated Parmesan cheese

- 1 egg

- Salt and pepper to taste


Instructions:

1. Preheat the oven to 200°C (400°F).

2. Bring a pot of salted water to a boil. Add the whole potatoes and boil until tender, about 15-20 minutes.

3. Drain the potatoes and let them cool slightly.

4. While the potatoes are cooling, cook the diced bacon in a skillet until crispy. Drain it on paper towels to remove excess grease.

5. Cut the potatoes in half and gently scoop out the flesh with a spoon, being careful not to break the skins.

6. In a bowl, mash the potato flesh with butter, milk, grated Parmesan cheese, egg, crispy bacon, and season with salt and pepper to taste. Mix well until smooth.

7. Fill the potato skins with the prepared mixture and place them back on the baking sheet.

8. Bake the stuffed potatoes for about 15-20 minutes, or until the tops are golden and crispy.

9. Serve hot and enjoy!
