Pasta with Seafood

 


Seafood pasta is a dish that combines the fresh and delicious flavors of the sea with the simplicity and versatility of pasta. This winning recipe combines a careful selection of seafood, such as mussels, clams, shrimp, and squid, with an aromatic sauce made with garlic, tomatoes, and white wine. The result is a dish that evokes summer and the scent of the sea, perfect for an elegant dinner or a casual lunch. The combination of delicate and intense flavors, along with the freshness of chopped parsley, makes this seafood pasta irresistible for food enthusiasts.

 


Ingredients:

- 350 g of spaghetti or linguine

- 500 g of mixed seafood (mussels, clams, shrimp, calamari, etc.)

- 3 tablespoons of extra virgin olive oil

- 2 cloves of garlic, finely chopped

- 1 red chili pepper, finely chopped (optional)

- 250 g of canned peeled tomatoes, crushed

- 120 ml of dry white wine

- Fresh parsley, chopped

- Salt and pepper to taste

 

Instructions:

1. Start by bringing a pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente.

2. Meanwhile, in a large pan, heat the olive oil over medium heat. Add the chopped garlic and chili pepper (if desired) and sauté for about a minute, making sure the garlic doesn't burn.

3. Add the seafood to the pan and cook over medium-high heat for a few minutes until the mussels and clams open up and the shrimp turn pink and are cooked through. Set aside some seafood in the shells to garnish the dish.

4. Remove the seafood from the pan and set it aside. Add the white wine to the pan and let it cook over medium-high heat for a couple of minutes to allow the alcohol to evaporate.

5. Add the crushed tomatoes to the pan and cook over medium-low heat for about 10-15 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

6. Once the sauce has reached the desired consistency, add the seafood back into the pan to heat it briefly. Drain the al dente pasta and add it to the pan with the seafood and sauce.

7. Mix all the ingredients together well, ensuring that the pasta is fully coated with the seafood sauce. Make sure each strand of pasta is well coated with the sauce and that the seafood is evenly distributed. This will allow all the flavors to blend together, making each bite delicious and flavorful. Be gentle when mixing to avoid breaking the seafood or undoing the pasta. You can use tongs or a spatula to combine the ingredients accurately.

8. Sprinkle freshly chopped parsley over the seafood pasta and mix again to distribute the flavor evenly.

 9. Let it cook for a minute so that all the ingredients can meld together perfectly.

10. Once ready, transfer the pasta with seafood to individual plates or a large serving bowl.

11. Garnish the dish with some of the seafood in the shells that you set aside earlier. Add a little more freshly chopped parsley for a touch of color and freshness.

12. Serve the hot pasta with seafood, accompanied by crusty bread or breadsticks.
