Lemon Meatballs

Ingredients:

- 500g ground meat (beef, pork, or a mix of both)

- 1/2 cup breadcrumbs

- 1/4 cup milk

- Grated zest of 1 lemon

- Juice of 1 lemon

- 2 cloves of garlic, finely minced

- 2 tablespoons fresh parsley, chopped

- Salt and pepper, to taste

- Olive oil, for browning the meatballs

- 1 onion, finely chopped

- 1 cup beef broth (or water)

- Fresh parsley, chopped, for garnish

 

Instructions:

1. In a bowl, combine breadcrumbs and milk and let it sit for a few minutes until the breadcrumbs soften.


2. Add ground meat to the bowl with the soaked breadcrumbs. Also, add the grated lemon zest, lemon juice, minced garlic, parsley, salt, and pepper. Mix all the ingredients well until you have a homogeneous mixture.


3. With slightly wet hands, shape the mixture into meatballs of desired size and set them aside.


4. In a large skillet, heat some olive oil over medium heat. Add the meatballs and brown them on all sides until they acquire a golden color. Transfer the meatballs to a plate and set them aside.


5. In the same skillet, add the finely chopped onion and sauté it in olive oil until it becomes transparent and lightly golden.


6. Add the beef broth (or water) to the skillet with the onion and mix well. Also, add the grated lemon zest and lemon juice. Adjust the salt and pepper according to your taste. Mix well to combine all the ingredients.


7. Take the browned meatballs and gently place them in the skillet with the broth and lemon juice. Ensure that the meatballs are fully immersed in the liquid.


8. Cover the skillet with a lid and let the lemon meatballs cook over medium-low heat for about 15-20 minutes, or until the meatballs are cooked through and the liquid has reduced to a flavorful sauce.


9. During the cooking process, gently turn the meatballs occasionally to ensure they cook evenly and absorb the lemon flavor.


10. Once cooked, remove the skillet from the heat and let it rest for a few minutes.


11. Serve the lemon meatballs hot, garnished with chopped fresh parsley for a touch of freshness and color.
