Spaghetti with Pesto

 


Ingredients:

- 350g spaghetti

- 50g fresh basil leaves

- 50g grated Parmesan cheese

- 25g grated Pecorino cheese

- 2 cloves garlic

- 60g pine nuts

- 150ml extra virgin olive oil

- Salt to taste


Instructions:

1. Start by boiling a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente.

2. While the spaghetti is cooking, prepare the pesto. In a blender, add the washed and dried basil leaves, pine nuts, peeled garlic cloves, grated Parmesan cheese, and grated Pecorino cheese. Blend the ingredients until smooth.

3. Once the pesto is ready, gradually add the extra virgin olive oil while continuing to blend until everything is well combined and has reached a creamy consistency. Season with salt to taste.

4. Drain the al dente spaghetti and transfer it to a large bowl. Pour the pesto over the spaghetti and toss well until evenly coated.

5. Serve the spaghetti with pesto hot, optionally garnished with fresh basil leaves and additional grated Parmesan cheese.
