Fried Shrimp, Whole Calamari, and Cod Croquettes
Ingredients:
For Fried Shrimp and Calamari:
- Whole shrimp (deveined)
- Cleaned calamari, cut into strips
- Flour for coating
- Salt and black pepper
- Oil for frying
- Semolina
For the Batter:
- 1 cup flour
- 1 cup beer (preferably light beer)
- Salt and black pepper
For Cod Croquettes:
- Cod fillets
- Potatoes
- Eggs
- Breadcrumbs
- Salt and black pepper
- Oil for frying
Instructions:
For Fried Shrimp and Calamari:
1. In a bowl, mix flour with beer until you get a smooth, lump-free batter. Add salt and pepper to taste.
2. Heat plenty of oil in a deep frying pan over medium-high heat.
3. Coat shrimp in semolina and calamari in batter, ensuring they are well covered.
4. Fry the semolina-coated shrimp and battered calamari in small batches until golden brown, about 2-3 minutes per side.
5. Drain them on paper towels and season with salt and pepper before serving.
For Cod Croquettes:
1. Boil the potatoes until tender, then mash them to get a smooth puree.
2. Skin and finely mince the cod.
3. In a bowl, mix the minced cod with the potato puree, adding salt and pepper to taste.
4. Take a portion of the mixture and form croquettes.
5. Dip the croquettes in beaten egg and then in breadcrumbs.
6. Heat plenty of oil in a frying pan over medium-high heat.
7. Fry the croquettes until golden brown on both sides, about 3-4 minutes per side.
8. Drain them on paper towels to remove excess oil.
9. Serve the hot cod croquettes, perhaps with a sauce of your choice.
