Cherry jam
Ingredients:
- 1 kg (about 2 pounds) fresh cherries, pitted and halved
- 600 g (about 3 cups) granulated sugar
- Juice of 1 lemon
Instructions:
1. In a large saucepan, combine the cherries and sugar. Let them sit for about an hour to allow the sugar to draw out the juices.
2. After an hour, place the saucepan over medium heat and bring the cherry mixture to a simmer, stirring occasionally.
3. Once simmering, add the lemon juice and continue to cook, stirring occasionally, until the mixture thickens and reaches the desired consistency. This usually takes about 30-40 minutes.
4. To test if the jam is ready, place a small amount on a chilled plate and run your finger through it. If it wrinkles and holds its shape, it's ready.
5. Once ready, remove the saucepan from the heat and let the jam cool slightly.
6. Transfer the jam to sterilized jars, leaving a little space at the top. Seal the jars tightly and let them cool completely before storing in the refrigerator.
