Parsley and Basil Crepes with Stretchy Mozzarella and Cooked Ham
Crepes are a French culinary delight that can be prepared in many different ways. Today, I present to you a surprising variation: parsley and basil crepes filled with soft, stretchy mozzarella and savory cooked ham. Ingredients:
For the crepes:

300ml milk

2 tablespoons finely chopped fresh parsley

200g sliced or diced mozzarella

150g sliced cooked ham
Instructions:
1. Start by preparing the crepe batter. In a bowl, sift the flour and add the eggs. Mix well with a whisk until you have a smooth mixture.

Gradually add the milk to the egg and flour mixture, continuing to whisk
vigorously to avoid lumps. Make sure to incorporate all the milk until you have
a smooth and liquid consistency.

Add the finely chopped parsley and basil to the batter and mix well to evenly
distribute the herbs.

Add a pinch of salt and mix again to combine the ingredients.

Heat a non-stick pan over medium heat and lightly grease the surface with
melted butter. Ensure that the pan is well heated before pouring the batter.

Pour a ladleful of batter into the pan, gently tilting it to evenly distribute
the batter. Cook the crepe for about 1-2 minutes on each side until it turns
golden and slightly crispy.

Repeat the process with the remaining batter, adding melted butter each time
you grease the pan.

Once all the crepes are cooked, proceed to fill each of them. Place some
mozzarella slices on the bottom half of each crepe and add one or two slices of
cooked ham on top of the mozzarella.

again or roll them into a cone shape.
