Vegan Gourmet Burger

Ingredients:

- 1 cup finely chopped cremini mushrooms

- 1 cup cooked and mashed chickpeas

- 1/2 cup cooked quinoa

- 1 small red onion, finely chopped

- 2 cloves of garlic, minced

- 1 tablespoon soy sauce

- 1 tablespoon Dijon mustard

- 1 tablespoon Worcestershire sauce

- 1 tablespoon fresh parsley, chopped

- 1 teaspoon smoked paprika

- Salt and pepper to taste

- Olive oil for cooking

- Hamburger buns

- Condiments of your choice (lettuce, tomatoes, cucumbers, vegan sauces, etc.)


Instructions:

1. In a non-stick skillet, heat a little olive oil and add the chopped onion and minced garlic. Cook over medium-high heat until they become translucent.


2. Add the chopped mushrooms to the skillet and continue cooking until they soften and release their moisture. Remove from the heat and transfer them to a bowl.


3. To the bowl with the mushrooms, add the mashed chickpeas, cooked quinoa, soy sauce, Dijon mustard, Worcestershire sauce, chopped parsley, smoked paprika, salt, and pepper. Mix well until you achieve a homogeneous mixture.


4. Take a portion of the mixture and shape it into patties, then lightly press them to form the burgers.


5. Heat a little olive oil in the same non-stick skillet and cook the vegan burgers for about 4-5 minutes per side, until they are golden brown and crispy.


6. Lightly toast the hamburger buns on a grill or in a toaster.


7. Assemble your vegan gourmet burger: place a burger patty on the bottom half of the toasted bun and add your choice of condiments such as lettuce, tomatoes, cucumbers, vegan sauces, etc.
