or mullet roe, adds a briny and intense note to the pasta. Combined with
garlic, fresh parsley, and extra virgin olive oil, bottarga pasta is an
explosion of taste that will delight the most refined palates and seafood
lovers.
Ingredients:
- 400 g of pasta (linguine, spaghetti, or vermicelli)
- 50 g of grated bottarga
- 3 tablespoons of extra virgin olive oil
- 3 cloves of garlic, finely chopped
- A handful of fresh parsley, chopped
- Freshly ground black pepper, to taste
- Salt, to taste
Instructions:
1. Start by bringing a large pot of salted water to a
boil.
2. While the water is heating, in a large pan, heat the
extra virgin olive oil over medium heat. Add the chopped garlic and cook for
about a minute, until it starts to turn golden and releases its aroma.
3. Add the grated bottarga to the pan with the garlic and
mix well to distribute it evenly.
4. Add a ladle of pasta cooking water to the pan to create
a light cream with the bottarga. Stir until you achieve a smooth consistency.
5. Cook the pasta in the boiling water according to the
instructions on the package until it reaches al dente.
6. Before draining the pasta, reserve some cooking water.
7. Drain the al dente pasta and transfer it to the pan
with the bottarga cream.
8. Add the chopped parsley and mix well to distribute the
bottarga cream throughout the pasta. If necessary, add some of the reserved
pasta cooking water to create a creamy consistency.
9. Taste and adjust the salt if necessary. Add some
freshly ground black pepper to give a hint of spiciness.
10. Once the pasta is well coated with the bottarga cream,
transfer it to a large serving bowl or individual plates.
